Slow-Cooked Beef Rib Tacos

Ingredients

  • Beef Ribs⁠
  • BBQ sauce and rub of your choice⁠
  • Soft taco shells⁠
  • Crunchy taco shells⁠
  • Salad mix⁠
  • Spicy Mayo⁠

Method

1. Preheat your pellet smoker to 120°C using Samba Smoking Pellets. Samba pellets have a smoky flavour profile that pairs well with beef.⁠
2. Rub the beef ribs with a generous amount of BBQ sauce to coat them. Then, pat the BBQ rub onto all sides of the ribs to help the rub stick better.⁠
3. Place the seasoned beef ribs directly on the smoker grates and close the lid. Let the ribs smoke for about 3 to 4 hours.⁠
4. Remove the beef ribs from the smoker and tightly wrap them in aluminium foil. This creates a steamy environment that promotes tenderness.⁠
5. Place the foil-wrapped beef ribs back into the smoker and continue cooking for an additional 1 to 2 hours, or until the meat is tender.⁠
6. Once the beef ribs are cooked and tender, remove them from the smoker and let them rest for a few minutes. Then, cut the ribs into smaller, bite-sized pieces.⁠
7. To assemble the tacos, start by laying a soft taco shell on a plate. Squeeze some spicy mayo onto the taco shell.⁠
8. Gently crack a crunchy taco shell in half and place the halves on top of the soft taco shell.⁠
9. Add a small handful of salad mix on top of the taco shells.⁠
10. Place the cut beef rib pieces on top of the salad mix.⁠
11. Serve the slow-cooked beef rib tacos immediately and enjoy!⁠
