Orange & Maple Glazed Ham

This Christmas ham is a juicy masterpiece, glazed with a perfect mix of sweet maple and zingy orange - it's the ultimate holiday feast centerpiece.

 

Ingredients

1/2 cup (120mL) pure maple syrup
1/4 cup (50g) brown sugar
1/3 cup (120mL) bourbon
Juice of half an orange
1/2 teaspoon fresh ginger grated
2 tablespoons of orange marmalade
1 cinnamon quill
1 whole leg ham
1 packet of cloves

Other items you’ll need:

BBQ gloves
Lump charcoal
Drip tray

Method

  1. Prepare the barbecue for indirect heat, approx. 250°C to 280°C.
  2. Add all of your glaze ingredients into a saucepan and simmer for around 8 minutes until the sauce has thickened slightly. Take off the heat and set aside.
  3. Slice around the hock and peel the skin off the ham and gently score a cross-hatch pattern all along the ham.
  4. Poke a clove into the centre of every square/diamond on the ham.
  5. Put the ham in the barbecue on top of a drip tray for 20min and then baste with 1/3 of the glaze. Place back in the bbq and repeat this step twice until it turns a lovely festive gold.
