Mac & Cheese by Smokey McBBQ

One pot wonder

Servings: 6-8
Prepping Time: 10 mins
Cooking Time: 2 hrs

 

Ingredients

  • 250g Pasta
  • 300ml Cream
  • 300ml Milk
  • 385ml Evaporated Milk
  • 100g Cream Cheese
  • 250g Cheddar
  • 2tsp Favourite Rub
  • 1tsp Dijon Mustard

Method

  1. Light your smoker or BBQ for indirect heat
  2. Cube cream cheese into small pieces
  3. Shred cheddar 
  4. Combine all ingredients into oven safe dish
  5. Mix well so cheese is dispersed
  6. Cover tightly with foil and place in smoker for 2hrs
  7. Do not open the foil befor ethis time as the steam will escape
  8. If you are cooking at hotter temps, check at 1.5 hrs
  9. After 2hrs, open foil and stir, you may serve immediately or rest.

Smoker Temp: 250°F

 

Tips

Shred and grill cheese on top for 5 min to add colour and extra flavour.
Add or reduce the milk content next cook to have thicker or saucier consistency.
