Ingredients
- Lamb Ribs
- 1 tbsp Boodua Creek lamb rub
- 1 tbsp tomato paste
- 2 tbsp balsamic vinegar 2 tbsp olive oil
- 1⁄4 cup tomato sauce
- 1⁄4 brown sugar
Method
- Light your smoker or BBQ for indirect heat
- Score the membrane in a cross hatch pattern
- Apply marinade (night before optional)
- Reserve some marinade aside
- Place on smoker for 1.5hrs
- Wrap rib with reserved marinade in foil
- Cook for additional 2.5hrs
- Probe tender ~ 203f
- Rest for minimum 30min
Smoker Temp: 250°F
