Ingredients

Serve: 2

Ingredients:

  • 1 cup all-purpose flour
  • 1 ½ cups milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1/4 tsp salt
  • 4 slices of ham
  • 1 cup shredded cheese (Gruyere, Cheddar, or Swiss)
  • 2 tbsp salted butter, for cooking

Method

  1. In a large mixing bowl, whisk together the flour, milk, eggs, melted butter, and salt until the batter is smooth and free of lumps.
  2. Heat a non-stick skillet or crepe pan over medium heat. Add 1/2 tbsp of butter to the pan and swirl it around to coat the bottom.
  3. Pour 1/4 cup of the crepe batter into the skillet and swirl the batter around to coat the bottom of the pan evenly.
  4. Cook the crepe for 1-2 minutes until the edges start to turn golden brown. Use a spatula to flip the crepe over and cook for an additional 30 seconds.
  5. Repeat steps 3-4 until all the batter is done.
  6. Once the crepes are cooked, place a slice of ham and a sprinkle of shredded cheese on each crepe.
  7. Fold each crepe in half, then fold it in half again to form a triangle.
  8. Heat a skillet over medium-high heat and melt the remaining 1 1/2 tablespoons of butter.
  9. Place the folded crepes in the skillet and cook for 1-2 minutes on each side until the cheese is melted and the crepes are heated through.
  10. Serve hot and enjoy your delicious ham and cheese crepes!
