Deniz's Brisket Mac 'n' Cheese

Mac and cheese just got an upgrade! This smoky, cheesy, and oh-so-creamy dish is loaded with tender brisket and topped with crunchy breadcrumbs for the perfect bite. The ultimate comfort food with a BBQ twist!

 

Ingredients

  • 500g pasta⠀
  • 2 cans evaporated milk
  • 1 tbsp all purpose bbq rub
  • 700g cheese (cheddar)⠀
  • 300g brisket⠀
  • Bread crumbs⠀
  • BBQ sauce⠀
  • Parsley

Method

1. Cook pasta till el dente, reserving 1 cup of pasta water, in case the cheese sauce is too thick.
2. In a pot bring two cans of evaporated milk to the simmer and mix in all purpose rub.
3. Add in 250g of the grated cheese and let that melt in, then add another 250g.
4. Chop 300g of leftover brisket and add to cooked pasta along with cheese sauce, stirring in till well incorporated.
5. Top with 200g of grated cheese and bake for 20-30min till golden brown on top.
6. Garnish with BBQ sauce, toasted bread crumbs and parsley or spring onion.
