Chicken Pyrizhky

Get fired up for these juicy and flavourful Chicken-stuffed Pyrizhky! Perfectly grilled over charcoal, try our easy recipe perfect for your next backyard cookout!

 

Ingredients

Serves 5-6 people

BUN:
350gr of full-fat yoghurt
350gr of self-raising flour
1 tsp of baking powder
1 tsp of salt
2 tbsp of dried or fresh mint, finely chopped

FILLING:
350gr minced chicken
2 tbsp mayonnaise
1 tbsp garlic powder
1 tbsp onion powder
1 zucchini, grated and drained
200gr baby bocconcini
1 tsp salt
½ tsp black pepper
2 tbsp butter, melted

Method

  1. Prepare your charcoal grill and light it up, then wait for the charcoal to start glowing and producing a layer of ash, which typically takes 10-15 minutes. At this point, the charcoal is ready for cooking.
  2. In a mixing bowl, knead the yoghurt, flour, baking powder, salt, and mint until a soft dough forms.
  3. Mix the minced chicken, mayonnaise, garlic powder, onion powder, grated zucchini, salt, and black pepper in a separate bowl. Mix well until fully combined.
  4. Divide the dough into 12 equal portions and roll each into a ball.
  5. Flatten each ball into a circle, and place a spoonful of the chicken filling and 1 ball of baby bocconcini in the centre of each circle.
  6. Fold the edges of the dough over the filling and pinch the edges together to seal.
  7. Place the pyrizhky on the grill plate and brush with melted butter.
  8. Grill the pyrizhky for 5-7 minutes on each side or until golden brown and fully cooked.
  9. Remove the pyrizhky from the grill and let them cool for a few minutes before serving.
