Ingredients
Serves 5-6 people
BUN:
350gr of full-fat yoghurt
350gr of self-raising flour
1 tsp of baking powder
1 tsp of salt
2 tbsp of dried or fresh mint, finely chopped
FILLING:
350gr minced chicken
2 tbsp mayonnaise
1 tbsp garlic powder
1 tbsp onion powder
1 zucchini, grated and drained
200gr baby bocconcini
1 tsp salt
½ tsp black pepper
2 tbsp butter, melted
Method
- Prepare your charcoal grill and light it up, then wait for the charcoal to start glowing and producing a layer of ash, which typically takes 10-15 minutes. At this point, the charcoal is ready for cooking.
- In a mixing bowl, knead the yoghurt, flour, baking powder, salt, and mint until a soft dough forms.
- Mix the minced chicken, mayonnaise, garlic powder, onion powder, grated zucchini, salt, and black pepper in a separate bowl. Mix well until fully combined.
- Divide the dough into 12 equal portions and roll each into a ball.
- Flatten each ball into a circle, and place a spoonful of the chicken filling and 1 ball of baby bocconcini in the centre of each circle.
- Fold the edges of the dough over the filling and pinch the edges together to seal.
- Place the pyrizhky on the grill plate and brush with melted butter.
- Grill the pyrizhky for 5-7 minutes on each side or until golden brown and fully cooked.
- Remove the pyrizhky from the grill and let them cool for a few minutes before serving.
