Campfire Damper
Gathering around a crackling campfire under a canopy of stars, with the aroma of wood smoke drifting through the air, one of the oldest campfire traditions still cherished today is cooking a campfire damper.
Ingredients
- 3 cups self-raising flour
- Pinch of salt
- 1 tablespoon sugar (optional)
- 1 cup water
- Butter or jam, to serve.
Method
1. In a large mixing bowl, combine the self-raising flour, salt, and sugar (if using).
2. Gradually add the water, mixing until a dough forms. You may need to adjust the amount of water slightly to achieve the right consistency.
3. Turn the dough out onto a lightly floured surface and knead gently until smooth.
4. Shape the dough into a round loaf, approximately 2-3 cm thick.
5. Wrap the dough in aluminum foil, leaving a bit of space for expansion.
6. Place the foil-wrapped dough on hot coals or a grill over the campfire.
7. Cook for about 20-30 minutes, turning occasionally, until the damper is golden brown and sounds hollow when tapped.
8. Once cooked, carefully unwrap the damper and serve warm with butter or jam.

alternate method
Instead of making a loaf, at Step 4;
4. Take a handful of the dough and roll it into a snake shape.
5. Wrap around a dry stick or skewer.
6. Hold over the fire to cook for 5 minutes, or until dough is cooked and browned.
